These pancakes are great for people that have to avoid gluten for health reasons or for people who are just trying to cut back on wheat. They taste delicious and are actually really high in protein. When working with coconut flour you have to use more eggs than you would if using wheat flour, so these pancakes are quite filling.

It’s day 10 of the challenge and hopefully you’re still going strong. We’re about a third of the way through and by now you should be noticing a difference in how you feel and possibly how you look. While the toughest part of the challenge is over, you might be starting to feel a little bored with what you’ve been eating. We tend to eat the same things over and over, especially when we’re trying to eat a certain way. This can quickly lead to boredom and cravings for things that we shouldn’t be eating.

Hey Guys! Welcome to day three of the challenge. Hopefully things are going well for you and I hope you’ve been enjoying lots of fresh, delicious food. Day 3 tends to be the hardest day of the challenge for most people, so I wanted to make sure I posted something on the blog to keep you motivated and encouraged. Some of you might be feeling amazing already, so that’s great, but if you’ve been craving the bad stuff or just feeling a little bummed out, I want to remind you that it’s all temporary and it’s worth waiting out. Whatever you do, don’t give up!
I’ve been eating some amazing food the last couple of days and I’ve posted a couple pictures on my Facebook page. Click here if you haven’t ‘liked’ the page yet. It’s day one of the challenge. You’re probably excited about the month ahead, but maybe also a little apprehensive. If you’ve never done anything like this before it can be scary to think of eating no processed food for an entire month. Some people might think it’s impossible.
I promise it’s not!

Getting Ready
You are going to want to make sure that your kitchen is cleared of all the crap that you can’t eat this month. That means getting rid of all the wheat products and sugary, processed foods. All the sodas and cookies, pastas and breads, and everything else that doesn’t qualify as a whole food should be removed completely. You don’t want to be tempted with them on a daily basis. Read more…
